This is a wonderful recipe to serve on New Years Day. There is a legend about serving Black Eyed Peas for the New Year. Serve them, and Good Luck for the upcoming year will be yours.
Wash the black eyed peas thoroughly.
Empty the black eyed peas in a stock pot and completely submerge them in water. They should be at least an inch from the surface of the water in the pot. You can always add more water if needed.
Add the other ingredients (onion, garlic, salt, pepper, and ham hock or smoked jowl).
Bring to a boil. Reduce to a simmer and cook for about 3 hours, stirring occasionally.
Turn the stove off, let the pot cool and place the whole pot in the refrigerator. Enjoy them the next day. Black eyed peas are always better if cooked the day before you have them.

If you really want these black eyed peas to taste great, consider adding hog head instead of ham hock or smoked jowl. Or, you can add the hog head in addition to the ham hock or smoked jowl. The only problem with hog head is, you have to boil it for a few hours, and then you have to strip the meat from the bone. This can get very messy and it’s a lot of work, but it is well worth the effort.
