Collard Greens Recipe

Ingredients
  • 1 large bag of fresh Collard, Turnip or Mustard Greens (or large bunch of Greens)
  • 1 large onion, chopped
  • 3 or 4 cloves of fresh garlic, chopped
  • 1 tablespoon of salt (season to desired taste)
  • 1 teaspoon of black pepper (again, season to desired taste)
  • 1/8 to 1/2 teaspoon of ground nutmeg
  • 3 or 4 pieces of ham hock, smoked jowl or smoked fatback

Preparation

If you decide to use the Greens that come in bunches, tear leaves from the stems and wash thoroughly.

Empty the entire bag of greens in a large stock pot and completely submerge them in water. They should be at least an inch from the surface of the water in the pot. You can always add more water if needed.

Add the other ingredients (onion, garlic, salt, pepper, nutmeg, and ham hock or smoked jowl or smoked fatback).

Bring to a boil. Reduce to a simmer and cook for about 3 hours, stirring occasionally.

Turn the stove off, let the pot cool and place the whole pot in the refrigerator. Enjoy them the next day. Greens are always better if cooked the day before you have them.

Additional Tips:

When you serve them, sprinkle some pepper sauce on them. It makes them even more delicious.
